She had no idea the garbage she was putting in her body because of factory farming animals.  Nevermind the ridiculous environmental destruction.  Also, I learned that in some cases the laws allow for the presence of pathogens like E Coli in up to 25% (yes, twentyfive) of chickens.  Which is where our future pandemics will come from, again.

Oh, and he's a finance guy, he was absolutely shocked at how much less it costs to buy real food instead of meat and processed junk.

There are many things that I could live without that would save me more money than the meat I eat daily but few would make my life less enjoyable as going meatless.  My mother in-law will be 95 (hopefully) in August eating like a regular American her full life.  Each to his own.

I'm glad you found something that works well for you and can live with.

Not vegan but you're fully aware of what you eat and how it directly affects your body in a way that most people simply don't care. Others don't fully understand why McDonalds fries has 50 ingredients but believe that diet coke they order will offset it. 

 

Dinner the other night had me all excited for fresh corn on the cob from local produce stand. Need to get some fresh brussel sprouts, been craving those grilled with a little balsamic vinegar.

Yeah, exactly what I hope more people do.  Be aware of your choices.  I've avoided surgery and other medical issues through dietary changes.  I could have avoided so many issues if I'd eaten better all along, or sooner.

 

Funny you mention the diet Coke, some studies are linking it to MORE obesity not less.  Triggers some fucked up shit in the brain.  Like meat addiction being controlled by gut bacteria.

Funny, coating them with balsamic and some herbs then air frying is my favorite, and so many people go nuts over them, but had never tried that option.  Steaming---ugh.

I would be shocked as well.  Don't know about your state, but eating more healthy for me has always meant a higher grocery bill.  There is a reason why the less fortunate (as in income) seem to suffer more from obesity.  Less expensive food is more likely to help you gain weight.

I went from deep three digits to well into two digits per trip when I changed my diet.  Shocking.  Processed food and meat is expensive as fuck.  Broccoli costs nothing.  This is why the entire industry wants you on the junk.

That's certainly true.  Probably because it smells and tastes like feet (to me).  Cauliflower is the same thing, just missing the chlorophyll.

For most restaurants around here, it's about the only green vegetable on the menu that isn't a salad.

What happened to green beans, peas, carrots?  I'll eat those.  Hell, even corn is sometimes missing (not that it is a good veggie).

Probably only if it's steamed.  I can't even be near anything steamed and green.  Air fried and roasted are fine.  Took me until just a few years ago to realize that.

Only Broccoli I ever ate that was okay, was at Bubba Gump Shrimp in Vegas.  Have no idea what they did to it.

It's pretty rare to get it fresh, not frozen, and no steaming.  That may be the right kind of place.  Frozen, to my horror, is lightly boiled before freezing and totally fucks it.

 

Buy some.  Put some balsamic on it assuming you like that, and some spices.  Roast it hot, like 400, and try it.

Battered, deep-fried broccoli florets with a hot Tabasco batter is just the best, the best.

There is a magical proportion of corn meal that makes it even better.

What temperature do you air fry and how long?

I like to start at 480 (max) and then cook by sight and feel.  I've never timed it.  If they are bigger pieces, and/or Moriah is eating them, I will reduced the temp and cook longer to get them cooked through.  She likes her veggies tragically overcooked.  I've started to finish-steam them for her, this may be a good alternative.  A pan with very little water and a lid for fiveish minutes afterward.

Just as a side note, we have checking all foods lately for sodium content and I was shocked when I looked at the spaghetti sauce we had, 600mg per serving and I'm guessing we would consume more than one serving.  Just about everything packaged is loaded with it.

It is absolutely insane, however there are a number of no-salt and low salt options out there.  Of course, DIY is the way to go, it takes a while to simmer but is not a lot of work to make.  I freeze some in two person portions.

 

Another option is to make pesto sauce without the oil and salt.  Pine nuts, basil, garlic, lemon juice, water, potassium chloride.
