There are also adjustable ones but after suggesting that I remembered that they're kinda bulky so a non-adjustable might be best.  The closer to the radiator inlet (upper hose) you install it the more frequently it'll run, and totally unnecessary.  Put it close to the outlet (lower hose) and it'll only run when the radiator outlet temp is high, like when stopped or moving too slow to make enough air flow.  I think the stock switch is set at 180F, but not sure.  If you want the fan to kick in sooner just move the new thermostat closer to the inlet side 'till you're happy with it.  Also, the closer to the fan center line you put the thermostat the sooner it'll turn off after the fan has turned on since it's seeing the coolant right after being cooled by the fan.  All that applies to any surface mounted thermostat you add.

Where would you even put that? I have found a few at the popular hot rod stores but they all need to be inserted into the RAD and I am a little skeptical of that

I used a push through the fins thermostat for years on my Astro when I converted it to electric fans, never gave me any problems at all.  And that thing ran for hours when we used it at a party as the stereo system (it had 8-15's.)

Push it though the fins.  MANY people have run them without issues.  It's a little scary, but works fine.
